DESCRIPTION: Very similar to the more common green sage. This variety comes in different shades, from green leaves with a purple underside through to very dark almost black foliage. Purple Sage is an attractive plant which provides interesting contrast in the garden. Useful in the border, rock garden and can even be used as a small hedge.

CULINARY: Fresh leaves have more flavour than dried. Used to flavour dressings, teas, cheeses, sausages and poultry. Leaves can be used the same as common sage. Also used in casseroles, sauces, stews and stuffings.
